Melinda’s healthier chocolate banana protein muffin recipe

As a mom on the go, I’m always looking for healthy and tasty snacks to feed my family. These chocolate banana protein muffins are one of my all-time favourites. The kids love them—and they are full of healthy ingredients that I can feel good about. I hope you enjoy these as much as my family does!

Prep time: 10 minutes
Baking time: 18-20 minutes
Yield: 12 muffins 

Ingredients: 

  • ¾ cup large flake oats (or gluten-free oats)
  • 3 ripe bananas 
  • 2 eggs (or vegan substitute)
  • 2 tbsp maple syrup
  • 1 tbsp melted Kardish Coconut Oil
  • 2 scoops Kardish Better Vegan Protein powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamons
  • Optional: add 1 tsp raw cacao powder for extra richness  

Directions: 

  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease muffin tin or line with liners 
  3. Grind oats in a blender or food processor until well ground
  4. Add all remaining ingredients and blend well
  5. Transfer to a muffin tin, evenly distributing into 12 muffins 
  6. Bake for 18 to 20 minutes or until a toothpick comes out clean
  7. Let muffins cool on a cooling rack for 15 minutes 
  8. Enjoy!
