Melinda’s healthier chocolate banana protein muffin recipe
As a mom on the go, I’m always looking for healthy and tasty snacks to feed my family. These chocolate banana protein muffins are one of my all-time favourites. The kids love them—and they are full of healthy ingredients that I can feel good about. I hope you enjoy these as much as my family does!
Prep time: 10 minutes
Baking time: 18-20 minutes
Yield: 12 muffins
Ingredients:
- ¾ cup large flake oats (or gluten-free oats)
- 3 ripe bananas
- 2 eggs (or vegan substitute)
- 2 tbsp maple syrup
- 1 tbsp melted Kardish Coconut Oil
- 2 scoops Kardish Better Vegan Protein powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamons
- Optional: add 1 tsp raw cacao powder for extra richness
Directions:
- Preheat oven to 350 degrees Fahrenheit
- Grease muffin tin or line with liners
- Grind oats in a blender or food processor until well ground
- Add all remaining ingredients and blend well
- Transfer to a muffin tin, evenly distributing into 12 muffins
- Bake for 18 to 20 minutes or until a toothpick comes out clean
- Let muffins cool on a cooling rack for 15 minutes
