Easy Almond Pulp Macaroons

Nut milks are not just for vegans or individuals with dairy allergies. Dairy can promote inflammation throughout the body and cause excess mucous production. So, if you are dealing with any sort of inflammatory condition (there are lots), sinus congestion, cough, or simply want to reduce your dairy intake, try switching out dairy for nut milks. Nut milks are simple to make with Got It! Bags, which can be purchased at all nine Kardish locations. 

At our nut milk workshop yesterday we made hemp + cashew milk (even a lightly sweetened chocolate version) and nibbled on these easy almond pulp macaroons made with only five ingredients. Never throw away leftover pulp again!

Easy Almond Pulp Macaroons 


Ingredients

1 cup well squeezed almond pulp
1/4 teaspoon Celtic sea salt
2 tbsp maple syrup
1/4 cup coconut oil
1/2 cup unsweetened shredded coconut

Instructions 

1. Preheat oven to 350°. 
2. Combine all ingredients in a large bowl. 
3. Roll dough into desired sized balls and place on lined baking sheet. 
4. Bake for 15-20 or until golden brown on the bottom. 
5. Allow the macaroons to cool before serving. 

Makes 24 small or 12 large
