Melinda's Protein-Packed Stuffed Mushrooms Recipe

Kickstart your year with my nutritious and delicious Lentil & Spinach Stuffed Mushrooms recipe! This dish is a perfect blend of health and flavour, ideal for maintaining your wellness goals. It features protein-rich lentils, vitamin-packed spinach, and aromatic spices, all tucked into juicy mushroom caps. 

These stuffed mushrooms are not just tasty but also a fantastic way to add more plant-based protein and fibre to your diet. They're easy to make and great for any occasion. Dive into the recipe and enjoy a wholesome start to your year!

Ingredients:
24 medium-sized mushrooms, cleaned and stems removed
1 cup cooked lentils (green or brown)
1 cup fresh spinach, chopped
1/2 cup onion, finely diced
2 cloves garlic, minced
1/2 cup breadcrumbs (whole wheat or gluten-free)
1/4 cup grated Parmesan cheese (optional)
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until softened.
3. Add chopped spinach to the skillet and cook until wilted.
4. In a large bowl, combine cooked lentils, sautéed vegetables, breadcrumbs, Parmesan cheese (if using), dried oregano, salt, and pepper. Mix well.
5. Fill each mushroom cap with the lentil and spinach mixture, pressing gently.
6. Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until mushrooms are tender and the stuffing is golden brown.
7. Garnish with fresh parsley and serve warm.
