Here are two one-pot recipes to get you started!

1. Quinoa Primavera Skillet

Ingredients:
1 cup quinoa
2 cups vegetable broth
1 cup cherry tomatoes, halved
1 zucchini, diced
1 bell pepper, sliced
1 cup broccoli florets
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
Grated Parmesan cheese for topping (optional)

Instructions:
1. Rinse quinoa under cold water.
2. In a large skillet, combine quinoa, vegetable broth, vegetables, garlic, and seasoning.
3. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked.
4. Season with salt and pepper, top with Parmesan, and serve.

2. Lemon Garlic Shrimp and Orzo

Ingredients:
8 oz orzo pasta
1 lb shrimp, peeled and deveined
1 cup cherry tomatoes, halved
1/4 cup fresh parsley, chopped
3 cloves garlic, minced
Zest and juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste

Instructions:
1. Cook orzo according to package instructions.
2. In a large pot, sauté shrimp, garlic, and cherry tomatoes in olive oil until shrimp turn pink.
3. Add cooked orzo, lemon zest, lemon juice, and parsley. Toss to combine.
4. Season with salt and pepper and serve immediately.
