Fall Superfoods to Boost Your Health

As the green leaves turn golden, the chill outside is making me crave warm drinks and comforting dishes, it's also a time to celebrate the harvest of health. Autumn brings with it an array of superfoods, packed with nutrients and flavours that not only satisfy our taste buds but also enrich our health. At Kardish, we are passionate about introducing you to the best that every season has to offer. This fall, let's dive into the superfoods that are as vibrant and hearty as the season itself.

1. Apples
An apple a day, as they say! Apples are a staple fruit of the season. They are rich in fibre, especially pectin, which aids in digestion and helps lower bad cholesterol. Apples also contain a variety of antioxidants that play a role in combating free radicals. Don’t forget the skin, it's where many of the nutrients reside!

2. Squash
Squash, with its vivid orange flesh, is not only visually appealing but also a powerhouse of nutrition. High in Vitamin A, beneficial for vision and skin, squash also packs a punch with Vitamin C, magnesium, and potassium. It’s a wonderful base for soups or roasted as a side dish.

3. Kale
Kale, the leafy green darling, continues to shine even in the fall. Packed with Vitamins K, A, and C, it is also a good source of calcium, making it beneficial for bone health. Its slightly bitter taste complements many fall dishes.

4. Cinnamon
Cinnamon, with its aromatic warmth, is perfect for fall dishes. Beyond its flavour, cinnamon is known for its anti-inflammatory properties and its ability to help regulate blood sugar. It's a delightful spice to sprinkle over beverages, desserts, and yes, even savoury dishes.

Roasted Autumn Harvest Salad

This baked salad incorporates all my favourite fall superfoods into one delicious and nutritious dish.

Ingredients:
4 cups of kale, de-stemmed and torn into bite-sized pieces
2 apples, cored and thinly sliced
1 medium-sized squash, peeled and cubed
1 tsp cinnamon
2 tbsp olive oil
Salt and pepper to taste

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, toss the squash cubes and apple slices with olive oil, ensuring they are well-coated.
3. Spread them out on a baking tray in a single layer. Sprinkle cinnamon over them, and season with salt and pepper.
4. Bake in the oven for about 25-30 minutes until the squash is tender and slightly golden.
5. In the last 10 minutes of baking, add the torn kale over the tray, allowing it to crisp up slightly.
6. Once baked, transfer all ingredients to a serving dish and give it a gentle mix.
7. Serve warm with a drizzle of your favourite vinaigrette or simply enjoy its natural flavours. This baked salad perfectly captures the essence of fall on a plate.
